Our Favorite No Bake Energy Bites!

Today we’re sharing one of Meagan’s favorite things to make. They are super quick and super easy to make and of course they are super yummy!! These are great for a quick snack, for after a workout and for placing in lunch boxes.

No Bake Peanut Butter Chocolate Chip Oatmeal Energy Bites

You’ll need:

  • 1 cup old fashioned oats

  • 2/3 cup toasted coconut

  • 1/2 cup peanut butter

  • 1/2 cup ground flax seed

  • 1/3 cup honey

  • 1/2 cup chocolate chips (We’ve substituted with M&Ms and it was also delish!)

  • 1 teaspoon Vanilla

Instructions:

  1. Start by adding everything to a bowl and mix well. Place the bowl in the fridge to chill for about half an hour. This will help the bites stick together when rolled.

  2. After the mixture has chilled take about a tablespoon of the mixture and roll into a ball. Repeat the remaining mixture. If the bites are having a hard time staying together you can add a little more honey or peanut butter. Stir together and roll again.

  3. Store in an a container in the fridge. They can last in the fridge for about two weeks..if they make it that long!!
